    Miguel Sague's mother Consuelo (Machiran) Sague, belonged to the Machiran family of Santiago De Cuba. This was a middle class family, headed by local real estate entrepreneur, Don Norberto Machiran. The family included a number of teachers and professors, some of them members of the faculty of the family-owned INSTITUTO COMERCIAL AMERICA. Austrian-American Carl Djerassi (1923-2015) was born in Vienna. He revolutionised the field of female contraception when he and his team of chemists produced synthetic progesterone which led to the development of the first oral contraceptive pill. [Listener: Tamara Tracz] TRANSCRIPT: Syntex approached me and said whether I would come to Syntex as associate director of chemical research. I remember I was at that time 27, 26, 27, 26. But I’d had been an industrial chemist for four years but I was a chemist at one lab in Ciba with two assistants. And Syntex offered me the associate director of their establishment with a dozen or more people in the lab. Now, you ought to get an idea of the primitive nature of a lab however of which I actually have a picture somewhere. Just right here. So you see this was my lab at Syntex. You see it’s a primitive lab. Of course labs were primitive, but you see how many people there were there. It’s pretty crowded. They all worked for, worked for me with me and I myself, I’m standing right here, was also working in the lab. But so you see that was a very important step and we- Well, I’m jumping a little ahead because that was Syntex. They offered me a job. I’d never been to Mexico. I mentioned it to friends of mine. They said, you are out of your mind because A, not only can one not do really anything in Mexico. Typical Yankee arrogance, you know. Anything south of the Rio Grande didn’t exist scientifically. And secondly if you want to do hot research you’ve got to do it in the hot places, not there. Well, that made sense. I mean I realised this myself but I’d never been to Mexico and they invited me to come there just for an interview trip, and I really felt sure. I’ll have a vacation trip to Mexico. In fact I did do that and then returned by way of Havana. So it was my first visit to Cuba and you must remember these were days when- This was not a short trip from New York to Mexico, changing planes in Texas. I remember going to Havana on a DC3 from Mexico to, to Cuba on Cubana and so on, but it was a marvellous trip. But, and that was the amazing thing, I was absolutely charmed by the place. Mexico City was a beautiful place compared to what it is now. Very clear, fantastic setting, and I realised, why not go there for a couple of years and learn another language? You know, at 26 years you learn to do all kinds of things. I’d recently been, you know, I was married and George Rosenkranz just charmed me. It was, you know, another European. His wife was also a refugee from Vienna, made me the most marvellous Viennese dessert. That was bribery of exactly the way I can be bribed very easily. And so they offered me the job and I accepted. The people, the people at Ciba were flabbergasted. Not considered a sort of indecent of me so to speak to leave, but then were willing to raise my salary to match the, the one in Mexico. But I didn’t accept as I never did before. Whenever someone raises your salary to meet the competition, that’s not the way to do it. I mean if they really valued me they should have offered me that before and not in response in the way they deal with football players and so on. But secondly the reason really was science. I wanted to work on cortisone. I didn’t want to- It wasn’t just a question of money, and I felt that here I had a much larger, more pairs of hands. They really were just pairs of hands because they were really all the assistants. They were really not- They were mostly women technicians who had been trained on the job with very little, no higher education whatsoever. Most of them not even high school graduates, but who had been trained well in the lab there in the manufacture of steroids. And there were a few Mexican chemists who had been trained abroad and who otherwise really were very capable chemists. And I really immediately adapted to that.

He was in Switzerland so he was able to leave easier and left and fled to Cuba. And Cuba again not exactly a hotbed of chemistry, but he survived and worked for a small pharmaceutical company. And a few years later was by hired by a minute Mexican pharmaceutical company named Syntex as a chief chemist and research, a chief chemist. Not researcher. He didn’t do any research. Now, why Syntex and why Mexico? So I just have to digress again a little bit into chemistry but I think it’s important. I think it is drawn here probably easier than in- In larger letters than in some of the others. It is- Okay. I was hoping it would be shown here. Yes. I’ll return, I’ll bring it back to cortisone in just a moment. Here is cortisone. Here is progesterone, a much simpler steroid hormone. You can see the difference between progesterone, the female sex hormone, and cortisone, the cortical steroid, is first of all this oxygen C11 and then the more complicated side chain. In other words two more hydroxyl groups where there are no hydroxyl groups in progesterone. That’s the only difference in this here, but even progesterone is very difficult to synthesise. And along came an American chemist in the late 1930s. A real maverick. In some respects a nut, but a genial nut named Russell Marker. He didn’t even have a PhD. Not because he was not qualified to get one because he had a real fight with his professor, a famous American, Morris Kharasch, and never got his PhD. Then he worked at Rockefeller Institute and ended up in an enormous argument with his supervisor there and left that, and went to Penn State and worked at Penn State. And worked on a series of steroids, which are this type and they’re called steroidal sapogenins, and the only difference again between these and these is you see they have two more rings up there, which are labelled as E and F. Now, that’s molecular garbage you might say because that makes this of course even more complex than these steroids over here. These occur in plants and they are particularly common in Mexican plants though they have also many others, and they are members of the Yam family. Dioscorea is the botanical genus name and one of them is called Diosgenin. Diosgenin has this particular structure. Cholesterol incidentally would have a same ring system here, also a double bond here, hydroxyl here, and there are other steroidal sapogenins. And you can see some for instance, here to, to show you. For instance, here is another one called hecogenin and you see the difference between that is only is has also an oxygen here. And this for instance comes from agave, from sisal and comes from the waste production of sisal and there are a lot of sisal plantations in Mexico as well as in East Africa at that time.

Miguel Sague's mother Consuelo (Machiran) Sague, belonged to the Machiran family of Santiago De Cuba. This was a middle class family, headed by local real estate entrepreneur, Don Norberto Machiran. The family included a number of teachers and professors, some of them members of the faculty of the family-owned INSTITUTO COMERCIAL AMERICA. It also included a local medical doctor Norberto Machiran Jr, director of the local Saturnino Lora Hospital, and (featured in this video), a rum distillery chemist and highly placed company official named Manuel Machiran. Manuel Machiran was a principal administrator in the Bacardi Rum Company which had been founded in Santiago De Cuba by Facundo Bacardi in the late 1880's and was still administered by the Bacardi family when Castro took it over in 1959. Manuel Machiran was the lead official in charge of founding the Bacardi plant in Puerto Rico in the 1950's. This video illustrates a 1968 visit by Manuel Machiran at the Sague home in Erie, PA during a period when he was in charge of the establishment of the Bacardi plant in Recife, Brazil.

Austrian-American Carl Djerassi (1923-2015) was born in Vienna. He revolutionised the field of female contraception when he and his team of chemists produced synthetic progesterone which led to the development of the first oral contraceptive pill. [Listener: Tamara Tracz] TRANSCRIPT: Syntex approached me and said whether I would come to Syntex as associate director of chemical research. I remember I was at that time 27, 26, 27, 26. But I’d had been an industrial chemist for four years but I was a chemist at one lab in Ciba with two assistants. And Syntex offered me the associate director of their establishment with a dozen or more people in the lab. Now, you ought to get an idea of the primitive nature of a lab however of which I actually have a picture somewhere. Just right here. So you see this was my lab at Syntex. You see it’s a primitive lab. Of course labs were primitive, but you see how many people there were there. It’s pretty crowded. They all worked for, worked for me with me and I myself, I’m standing right here, was also working in the lab. But so you see that was a very important step and we- Well, I’m jumping a little ahead because that was Syntex. They offered me a job. I’d never been to Mexico. I mentioned it to friends of mine. They said, you are out of your mind because A, not only can one not do really anything in Mexico. Typical Yankee arrogance, you know. Anything south of the Rio Grande didn’t exist scientifically. And secondly if you want to do hot research you’ve got to do it in the hot places, not there. Well, that made sense. I mean I realised this myself but I’d never been to Mexico and they invited me to come there just for an interview trip, and I really felt sure. I’ll have a vacation trip to Mexico. In fact I did do that and then returned by way of Havana. So it was my first visit to Cuba and you must remember these were days when- This was not a short trip from New York to Mexico, changing planes in Texas. I remember going to Havana on a DC3 from Mexico to, to Cuba on Cubana and so on, but it was a marvellous trip. But, and that was the amazing thing, I was absolutely charmed by the place. Mexico City was a beautiful place compared to what it is now. Very clear, fantastic setting, and I realised, why not go there for a couple of years and learn another language? You know, at 26 years you learn to do all kinds of things. I’d recently been, you know, I was married and George Rosenkranz just charmed me. It was, you know, another European. His wife was also a refugee from Vienna, made me the most marvellous Viennese dessert. That was bribery of exactly the way I can be bribed very easily. And so they offered me the job and I accepted. The people, the people at Ciba were flabbergasted. Not considered a sort of indecent of me so to speak to leave, but then were willing to raise my salary to match the, the one in Mexico. But I didn’t accept as I never did before. Whenever someone raises your salary to meet the competition, that’s not the way to do it. I mean if they really valued me they should have offered me that before and not in response in the way they deal with football players and so on. But secondly the reason really was science. I wanted to work on cortisone. I didn’t want to- It wasn’t just a question of money, and I felt that here I had a much larger, more pairs of hands. They really were just pairs of hands because they were really all the assistants. They were really not- They were mostly women technicians who had been trained on the job with very little, no higher education whatsoever. Most of them not even high school graduates, but who had been trained well in the lab there in the manufacture of steroids. And there were a few Mexican chemists who had been trained abroad and who otherwise really were very capable chemists. And I really immediately adapted to that.

Jennifer Cockrall-King, author of Food and the City, introduces the topic of urban agriculture and the coming revolution away from long range, tasteless food. She starts by inventorying the results of large-scale intensive agriculture and big box retailing. From her perspective, industrial food is a recombination of salt, fat and sugar managed by food chemists not food nutritionists. She then takes us on a journey of urban agriculture in Europe, the USA and Cuba (where urban agriculture is not a fad but core to Cuba's food self sufficiency). She reviews what is emergent in Canada and some of our contributions to urban agriculture (e.g. SPIN farming (Small Plot Intensive farming), Saskatoon).
